In the retail area of the St. Luke’s Episcopal Cafeteria (Bertner Café) ARAMARK addressed a need for healthy trendy items in the grill and deli areas at affordable prices. ARAMARK developed this program because the consumer expressed an interest in healthy affordable menu choices on the client close up survey in 2011. To fulfill this need monthly promotions in these two areas were implemented.
In the month of October the Sriracha Turkey Burger and Vegetable Sandwich with Hummus and Feta were debut. To promote these items marketing strategies were developed based on the demographics and market segmentations discovered by surveys and questionnaires. Once the marketing strategies were implemented and assessed it was determined that this promotional event was a huge success especially for the turkey burgers! Overall sales of turkey burgers went up 55%. Sales of grab-n-go sandwiches went up 14%! Furthermore sales of turkey burgers alone brought in revenue of $742.76 compared to an average of $407.32. Whereas, the grab-n-go sandwiches brought in a revenue of $1401.32 compared to an average of $1209.98. The overall out come of this promotion was a great success and would only get better with further implementation.
